DOMAINE DE L’ECU
2021 MUSE
The Cabernet Sauvignon for this project is grown on a single hectare of Silex and Gneiss with Orthogneiss subsoils in the western Loire Valley. The climate here is heavily influenced by the Atlantic. Yields are unusually low for rosé to ensure depth and intensity despite the wine’s low alcohol levels. The grapes are partially direct pressed and partially bled off into tank for fermentation. The wine is eventually racked and bottled with minimal SO2. Only 500 cases were produced this vintage.
