DOMAINE DES MARNES BLANCHES
Domaine des Marnes Blanche was started by Pauline & Géraud Fromont when they were in their early twenties. Barely out of winemaking school, the couple purchased land in Cesancey, a town in the Southern Jura. Named after the area’s most illustrious soil type, they made a wide variety of styles: from ouillé Chardonnay’s to oxidative Savagnins, and lithe reds from autochthonous varieties.
2022 CHARDONNAY LES MOLATES
This assemblage comes from several plots around the town of Gevingey. The vines average 35- years-old and are planted in classic marl and limestone. The grapes are pressed directly to barrel for fermentation and malolactic conversion. No bâtonnage is done during élevage, and the barrels are kept fully topped to prevent oxidation. The wine is bottled unfined and unfiltered with minimal SO2 after 10 months.
2020 CHARDONNAY EN QUATRE VIS
This wine comes from several vineyards in Cesancey. The vines are between 8 and 70+ years old, planted in white marl and limestone. The grapes are direct pressed into 600L demi-muids for fermentation and a 22-month élevage. No SO2 is added at bottling.
2022 SAVAGNIN LES MOLATES
This assemblage comes from several plots around the town of Sainte-Agnès. The vines average 25-years-old and are planted on limestone over marl. The grapes are pressed directly to barrel for fermentation and malolactic conversion. No bâtonnage is done during élevage, and the barrels are kept fully topped to prevent oxidation. The wine is bottled unfined and unfiltered with minimal SO2 after 10 months.
2022 SAVAGNIN EN QUATRE VIS
This cuvée is made from grapes grown in Cesancey on the wineries eponymous white marl soils. Planted in 1958, they’re some of the oldest vines under their care. The grapes were whole-cluster pressed into foudre and concrete egg for fermentation and a twenty-two-month élevage. The wine is racked and bottled without SO2.
2020 SAVAGNIN AUX BOIS
This cuvées comes from Vincelles. The vines may be young (planted in 2012), but the famous gryphées soils are already yielding incredibly precise and powerful wines. The grapes are direct pressed into small neutral oak barrels for fermentation. After a 22 month élevage, the wine is racked and bottled without any additional SO2.
2022 SAVAGNIN EN JENSILLARD
This cuvée is made from a rare biotype of Savagnin called Savagnin Muscaté, which, as the name suggests, is much more aromatic. The vines are over 60 years old and are planted in the region’s classic marl and limestone. The grapes are direct pressed into neutral barrel for fermentation and élevage. The wine is bottled unfined and unfiltered with minimal SO2 after 10 months – the shorter élevage preserves aromatic intensity.
2022 POULSARD
These old vines are planted on red and white marl in Vincelles and Sainte Agnès. The grapes are fermented whole cluster for ten days before being pressed off into 225L barrel to finish fermentation. After a nine-month élevage, the wine is bottled without fining or filtration. No SO2 is added.
2022 PINOT NOIR
The grapes for this cuvée come from a plot in Cesancey planted in 1983 on red marl and limestone. The grapes are whole-cluster fermented for eight days before being pressed off into neutral barrel for élevage. The wine is bottled in August without SO2.
2022 TROUSSEAU
This cuvée comes from 5-40-year-old vines planted on red and white marl. The grapes are fermented as whole clusters for ten days before being pressed off into 225L barrel to finish fermentation. After a nine months élevage, the wine is bottled without fining or filtration. No SO2 is added.
CRÉMANT DU JURA
This cuvée comes from Chardonnay vines planted in 1983 in the town of Sainte-Agnès on red and brown marl over limestone. The grapes are direct pressed into old oak barrel where the wine ferments and ages over the winter. In the spring the wine is bottled with a small amount of yeast and sugar for a secondary fermentation. After more than two years on lees the wine is disgorged. The dosage typically has <2g/l of sugar.
CRÉMANT DU JURA RESERVE
Their top sparkling cuvée comes from a plot planted in 1983 in Cesancey. Soils here are the white marl and limestone that give the estate its name. The grapes are direct pressed into neutral oak barrel for fermentation. The wine is bottled in the spring with a small amount of sugar and yeast for secondary fermentation. After 18 months on lees, the wine is disgorged and released without dosage.
2022 MACERATION
This is Géraud and Pauline’s skin fermented wine. It is made from Chardonnay (80%) and Savagnin (20%) planted on Marnes du Lias. The grapes were fermented as whole clusters for fifteen days before being pressed into neutral barrel for a twenty-two-month élevage.
MACVIN DU JURA
This wine is made from a blend of equal parts Savagnin and Chardonnay planted in 1958 on white marl and limestone. The grapes are direct pressed, and the juice is blended with marc from white grapes (33%). The macvin then ages in 225l barrel for two years before bottling.
2019 VIN DE PAILLE
This cuvée is a blend of Savagnin, Chardonnay, and Poulsard grown on red and brown marl in Sainte Agnès. The wines are between 25 and 50 years old. The grapes are dried on straw mats before the concentrated juice is gently pressed into barrel for fermentation. After six years in barrel, the wine is racked and bottled. 120g/l RS
2016 VIN JAUNE
Incredibly ripe Savagnin (60%) and Chardonnay (40%) are harvested mid-October and crushed directly into barrel without racking or settling. The vines were planted in 1958. The wine is vinified in a separate cellar more conducive to biological ageing. No SO2 is used during élevage to keep the yeast healthy. The barrels are never topped. After 84 months, the wine is racked off and bottled in traditional clavelin without fining or filtration. No SO2 was added.
2022 COUP DE JUS DIONYSOS GAMAY

This cuvée is made from Gamay Noir from Beaujolais. The grapes are fermented as whole clusters before being pressed off into 600L barrel for a ten-month élevage.

This cuvée comes from old vine Auxerrois & Pinot Blanc planted on limestone in Alsace. The grapes were whole cluster pressed into neutral barrel for fermentation and a ten-month élevage.
2021 COUP DE JUS RABBIT JACQUÈRE

This cuvée is made from Jacquère grown in Savoie on yellow marls. The grapes were whole cluster pressed into concrete egg for fermentation and a ten-month élevage.
2022 COUP DE JUS ZEUS GRENACHE

This cuvée is made from Grenache grown in the southern Rhone. The grapes are fermented as whole clusters before being pressed off into 600L barrel for a ten-month élevage.
BULLE TON BODY
This side project was started by Géraud after several incredibly small harvests in the Jura. He sources organic grapes from his friends in other regions and vinifies them into playful wines. This cuvée is made from Pinot Blanc (50%) and Auxerrois (50%) from Alsace. The vines were planted in 1978 on Limestone. The grapes are whole cluster pressed into stainless steel. When the juice reaches 21 g/L of residual sugar it is chilled, racked, and bottled. This naturally sparkling wine was disgorged in June.
2020 CHARDONNAY LES NORMINS
This wine comes from their oldest Chardonnay vines (75-years-old) in Cesancey. The soils are iron rich fossilized limestone over marl. The grapes are direct pressed to barrel for fermentation and malolactic conversion. This ouillé style wine is left in barrel for nearly two years before it is bottled unfined and unfiltered.
2018 CHARDONNAY EMPREINTE SOUS VOILE
The grapes for this cuvée come from a plot in Saint Agnès planted in 1982. Red and brown marl soils add richness, while the limestone topsoil ensures the grapes retain enough acidity to withstand extended ageing. The grapes are direct pressed into barrel for both fermentation and élevage. The barrels aren’t topped, which allows the wine to develop a layer of flor. After 36 months, the wine is racked and bottled without SO2.
2018 SAVAGNIN EMPREINTE SOUS VOILE
This cuvée comes from 45+-year-old vines planted on classic marl and limestone. The wine is vinified in a separate cellar more conducive to biological aging. Warm grapes are crushed into barrel to encourage the growth of flor as quickly as possible. No SO2 is used during élevage to keep the yeast healthy. After 48-months the wine is racked off and bottled without fining or filtration.
