2020 nimbus albus
This wine is a blend of equal parts Malagousia and Assyrtiko. The former is planted on clay-loam while the latter is planted in slightly siltier soils. The vines are only ten years old but are already showing great maturity. The grapes are cold soaked for a day or two after harvest and then are pressed into stainless steel. Each variety ferments separately but after racking off the gross lees they are blended for élevage. After three months in tank the wine is bottled with minimal sulphur. 12.5% ABV
2018/19 shadow play red
Planted in 2009, this half hectare plot features Xinomavro, Greece’s quintessential red grape. Known for extremely high acid and muscular tannins, only the best sites can get this variety fully ripe. The grapes were destemmed and fermented in open top tank. The wine is then pressed off into barrel for a yearlong élevage. 13.1% ABV, 5,65 g/l TA, pH 3.73
2020 pet-nat
This wine is made from a blend of Assyrtiko and Malagousia. The grapes are direct pressed to tank where the juice spontaneously ferments. It is kept at extremely cool temperatures and is racked off its gross lees. The following year, the wine is bottled with a small amount of unfermented Xinomavro for secondary fermentation. The wine is released undisgorged at roughly 5 bars of pressure. 12.5% ABV
2020 retsina
This wine is made from a blend of Roditis and Assyrtiko. The grapes are direct pressed into tank where they ferment with a small amount of pine resin from Aleppo Pine’s in the Evia Mountains. Dimitris says the way they source the resin doesn’t harm the tree or use chemicals like conventional retsina producers. The wine is racked into stainless steel for a short élevage before bottling with moderate levels of SO2. 13.5% ABV
