PAST WINES
2020 VIN DE SOIF
This cuvée features Gamay Noir (92%) and Zweigelt (8%). The grapes were destemmed and fermented on skins between one and twelve days for various levels of extraction. After an over winter élevage in neutral barrel, the wine is bottled. 12% ABV.
2020 AFTERGLOW
This wine is somewhere between orange and pink stylistically. It is made from skin fermented Gewurztraminer and Riesling, blended with direct pressed Gamay Noir. 12.5% ABV.
2020 GOLDEN HOUR
This wine is a blend of several skin fermented wines. Sauvignon Blanc sees ten days on skins, while Riesling and Chardonnay Musqué spent over 150 days gently macerating without any cap management. The Chardonnay was affected by botrytis which tends to slow fermentation and increase glycerol resulting in a richer wine. Inspired by the Jura, some of the barrels were filled to 2/3rd to allow gentle oxidation. 12.5% ABV.
2019 CABERNET FRANC
This was Dave & Christian’s first foray into winemaking. The fruit for this project comes from Ontario’s Niagara region. The grapes were fermented in open-top talk with 50% whole-cluster inclusion. After a one-year élevage in neutral French oak barrels the wine was racked and bottled unfined and unfiltered. Only 100 cases were produced for this inaugural vintage. 13.3% ABV
2020 NIGHTCALL PET-NAT
This wine is made from Ontario Zweigelt harvested near the end of September. The grapes are destemmed and crushed, macerating for three days before being pressed off. The juice is then fermented in stainless steel but bottled before completion resulting in a lightly sparkling rosé. 11% ABV
