FRED #5

This wine is a blend of Alibernet (a cross of Alicante Bouchet and Cabernet Sauvignon) and Dunaj (a crossing of Blauer Portugieser and Sankt Laurent). Three vintages are blended together, 2017-2019. The grapes are destemmed and co-fermented for two weeks in open top tank before being pressed off. The wine is bottled without fining, filtering, nor sulphur. 12.5% ABV

2018 RIZLING

This wine is made from Rizling (Welschriesling) mainly grown in a half hectare plot called Farkas. The vines go unfertilized and are trained as single-pole bush-vines. Although the vines are young, they are already producing mature and powerful wines. The grapes are destemmed and pressed into neutral barrel for fermentation. The wine is bottled without fining, filtering, nor sulphur. 12.6% ABV

2018 VELTLIN

This wine comes from a small plot of Grüner Veltliner Zsolt is particularly proud of. The grapes are destemmed and pressed into neutral barrel for fermentation. This wine has a tendency to develop flor, so he keeps the barrels fully topped. The wine is eventually racked and bottled without fining, filtration, and has no added sulphur. 12.34% ABV

2018 PINOT NOIR

This wine comes from a site called Vad. It was planted between 2010-2012, and although it’s quite young the wines are already intensely flavoured. The soils here are clay-loam over limestone and marine sediment. After destemming the grapes ferment in open-top vats for two weeks before being pressed off into old 228L and 500L barrel. The wine is bottled unfined, unfiltered, and without sulphur. 12.55% ABV

2018 VIOLA

This wine is made from Alibernet (50%), Blauer Portugieser (25%), and Sankt Laurent (25%). The Alibernet was direct pressed; it is a teinturier which means that its flesh is deep ruby without skin contact. The Blauer Portugieser and Sankt Laurent were foot crushed and fermented on skins for two weeks before being pressed off. 11.5% ABV

2018 ROZALIA

This wine is made from Sankt Laurent, direct pressed into neutral barrel and fermented dry. The wine is bottled with a small amount of unfermented Alibernet juice which causes a secondary fermentation. The wine is slightly sparkling, high in volatile acidity, and undisgorged. 11% ABV

FRED #4

This wine is a blend of Alibernet (a cross of Alicante Bouchet and Cabernet Sauvignon) from 2017, Dunaj (a crossing of Blauer Portugieser and Sankt Laurent) from 2017, and Modrý Portugal from 2018. The grapes from 2017 were co-fermented in open top vats with gentle hand plunging for two weeks. The finished wine was settled in barrel for three months and then bottled without Sulphur. 541 Cases Produced.

PORTA #5

This wine is made from a wild combination of Grüner Veltliner, Welschriesling, Devín (a cross of Gewurztraminer and Roter Veltliner) and Aurelieus (a cross of Neuburger and Riesling). The grapes are all destemmed before they undergo several types of fermentation. The Grüner spends six months under flor, the Welschriesling and Devín are aged in barrel on full lees, and the Aurelieus is fermented on skins. The wine is eventually assembled (including portions of the last six vintages) and bottled without fining, filtration, or Sulphur. 67 Cases Produced.

PORTUGAL

This cuvée comes from seven-year-old Modrý Portugal (Blauer Portugieser) vines. The Vad Vineyard is planted to VSP on a south-west facing slope. The grapes are destemmed and fermented in open top vat for roughly two weeks. The cap is plunged daily by hand for gentle extraction. The wines goes through a super short three month élevage in barrel before being bottled without any Sulphur. 167 Cases Produced.

CREME #3

This sparkling wine is made entirely from Devín. The base wine is fermented for a short period of time in new oak, before being moved to stainless steel tank. It then spends several years on lees. From the most recent vintage is fermented in stainless steel, and blended with the older base wine. The blend is bottled and continues to ferment until the wine reaches between 2-3 atmospheres of pressure. It is unfined and unfiltered with no added Sulphur. 125 Cases Produced.
