About: This side project was started by Géraud after several incredibly small harvests in the Jura. He sources organic grapes from his friends in other regions and vinifies them into playful wines. This cuvée is made from Gamay Noir, planted on granite in Beaujolais. The grapes were whole cluster pressed into tank and right before fermentation finished (22 g/L of R/S) the wine is racked into bottle, becoming a petillant naturel. About: The Fiano for this wine is grown on alluvial and clay soils. About:  Three own-rooted sites were used for this cuvée: No Clos Radio and Plum Hill Vineyard in Tualatin Hills, and Logsdon Ridge near Corvalis. Each site is incredibly unique, but the farming is unanimously organic and unirrigated. This wine is made from Pinot Gris (80%), most of which was fermented on skins (open top and carbonic for 20 days), but some were directly pressed into barrels. About: This wine is primarily Steuben (47%) partially skin fermented for 12 hours, partially skin fermented for six days. Delaware (25%) is the next largest component, seeing a quick 12 hours on skins before being pressed off. Niagara (19%) and Rosario Bianco (9%) were fermented whole cluster in amphora before being pressed off. About:  This wine is made from a blend of Torontel, Corinto (Chasselas), Cristalina (Semillon) and Muscat d’Alexandria. The dry farmed vines are over 100 years old, planted in sandy soils in two separate plots, a total of 3ha. The grapes are hand destemmed using the traditional zaranda method. The juice then ferments on skins for seven to fifteen days in open top wooden vats. About: The Trollinger (Schiava) is planted on a combination of Bunter Mergel and Kieselsandstein soils just beneath the famed Pulvermacher Grosses Gewachs. With just 1.2 hectares of old vines on his property, production is limited. The south-facing slope is incredibly steep, often 45º, making mechanization all but impossible. The large clusters of fat juicy grapes are mostly destemmed into bins for cold maceration. After several days in the cooler, some of the juice is bled off for rosé (up to 20%) while the rest is warmed up for fermentation.
